Join us for an unforgettable Pozole dinner night, hosted by Jesus Lopez-Guisa! Gather six friends for an evening filled with delicious flavors, lively conversations, and warm hospitality. Don’t miss this chance to experience a delightful culinary tradition!

Pre-Columbian civilizations considered Maize a sacred plant, consumed during special religious ceremonies. Corn remains a key ingredient in many Mexican dishes, including pozole, a beloved and iconic dish in Mexican culture that symbolizes celebration and tradition. Pozole is a traditional Mexican soup or stew made with hominy and meat, typically pork or chicken. It is a staple of Mexican cuisine and is particularly popular during celebrations, such as the CAPER fundraising event.

There are three main varieties, representing the colors of the Mexican flag:

  • Pozole Rojo (Red Pozole): Made with red chiles, pork, giving it a vibrant red color and spicy flavor.
  • Pozole Verde (Green Pozole): Features a salsa Verde made with green chiles and tomatillos, and chicken, resulting in a fresh, tangy taste and green hue.
  • Pozole Blanco (White Pozole): Omits the Chile sauce for a milder flavor and clear broth, allowing the natural flavors of the hominy and meat to shine. Often served with different salsa on the side.
  • To seduce those vegetarians bidding for this dinner, I will prepare exclusively a Vegetarian Pozole.

Key ingredients

  • Hominy, Large, dried white corn kernels treated with an alkali (nixtamalization process).
  • Meat: Typically, pork or chicken.
  • Broth: Made with onions, garlic, and spices like oregano, cumin, and bay leaves.
  • Chiles: The type of chiles used determines the pozole's color and flavor profile.

Toppings and garnishes

Pozole is traditionally served with various toppings for individual customization, including:

  • Shredded lettuce, onion, radishes, avocado, lime, different salsa, chili pepper, and Cotija cheese (especially for pozole rojo).

Guacamole.

Guacamole is an avocado-based dip, spread, or salad, originating in Mexico. The word "guacamole" comes from the Aztec Nahuatl words for avocado (āhuacatl) and sauce (mōlli).

Carefully mashed aguacate, with lime juice that adds acidity to balance the richness of the avocado, preventing browning. The finely chopped onion adds a sharp, clean flavor, and the cilantro increases the fresh herbal notes. Tomatoes add color, and a subtle sweetness, giving texture, and touch of garlic and salt finalize the complexity of this amazing dish. The vibrant jalapeño spiciness is beautifully tempered by the rich, creamy texture of avocado, creating a delightful harmony that dances on the palate. the umami.

Ceviche.

Ceviche is a popular Latin American dish consisting of fresh, shellfish marinated in citrus juices, typically lemon or lime. The acid in the citrus denatures the proteins in the seafood, causing it to become opaque and firm, resembling the texture of cooked seafood. UNESCO recognizes Ceviche as an Intangible Cultural Heritage of Humanity.,

Queso Fundido.

Mexican chorizo and Oaxaca cheese. Optional ingredients for garnish or added flavor include tomatoes, cilantro, and different peppers.
